There are a few ways to tell if the wall you are looking at is drywall. You can determine if a wall is drywall by removing a switch plate and looking, you will often be able to see right away what kind of wall it is. If the wires are loose, it is most likely a plaster wall. If the wires are in enclosed in a box, the wall is most likely drywall. 

Unfortunately, water damaged drywall often needs to be replaced. With soaked flooring, wetness wicks upwards in drywall and inside wall cavities. So it's necessary to remove baseboards to check. If the drywall is soft or distorted it will need drying and perhaps replacement most of the time.

There are many reasons why cracks may appear in drywall or plaster. House settling, poor drywall or plaster installation, moisture behind the wall, objects on the wall causing it stress, and cracked paint are a few of the common culprits.
